Ashura Recipe - Tips for a Perfect Consistency and Flavor

Ashura, a dessert often met with apprehension due to the lack of a clear-cut recipe, can be made successfully with some key tips. For those curious about how to make ashura, we're sharing an easy recipe with detailed instructions and essential tips for achieving the right texture and taste. 

Ingredients for Ashura Recipe:
- 1/2 kilogram wheat
- 1 cup chickpeas
- 1 cup beans
- 2.5 cups granulated sugar
- A handful of raisins
- 1 cup chopped dried apricots
- A handful of dried figs
- 1 cup pistachios and hazelnuts
- 6 dried figs
- Orange zest
- 1/2 cup raw almonds
- 10 cloves

Ashura Recipe - Key Tips:
- Wash the main ingredient, wheat, thoroughly until the water runs clear. Use hot water while cooking to prevent legumes from hardening. If using figs, add them towards the end of the cooking process to prevent darkening and achieve a light-colored fig ashura.

Ashura Recipe Instructions:

- Start by washing the half kilogram of wheat until the water is clear. Then, place the wheat in a pot and cover it with enough water. Let it simmer. After 10 minutes, let it sit overnight without draining the cooking water. The wheat will absorb the water and swell. Similarly, soak 1 cup each of chickpeas and beans in water overnight.

- The next day, add 2 liters of hot water to the wheat and boil for about half an hour. Simultaneously, cook chickpeas and beans in separate pots.

- Boil 10 cloves in 1 cup of water, strain the boiling water, and set it aside. This is done to extract the clove aroma without having solid cloves in the dish.

- In a separate pot, add enough hot water to cover the chopped dried apricots, dried figs, and raisins, then boil thoroughly.

- Likewise, in a different pot, peel and boil the nuts (almonds, pistachios, and hazelnuts) in hot water.

- In summary, in a large pot, cook the wheat with 2 liters of hot water. Add grated orange zest (optional), clove water, boiled chickpeas, and beans. Cook for about 3 minutes while stirring. At this stage, we added an additional liter of hot water to achieve the desired consistency. In total, we used 3 liters of hot water for the ashura recipe.

- Then, add the other boiled and drained nuts, fruits, and raisins, and continue cooking.

- After 2-3 minutes, to achieve a lighter-colored ashura, add half a teacup of warm milk and 2.5 cups of granulated sugar. Boil, stirring occasionally, for another 10 minutes.

- Add dried figs, cook for a little while longer, then remove from heat and distribute into bowls. Decorate with pomegranate seeds and additional nuts, according to the season. Let it cool.

We didn't use starch in this ashura recipe, and the consistency turned out truly amazing. By following the precise measurements, you can create a delicious ashura without using starch. You can also enhance presentation by decorating it creatively. Ashura allows for optional ingredients, so omitting those you don't have on hand (except legumes and wheat) won't pose a problem for the recipe's preparation and consistency.
