Tire Meatballs (Tire Köftesi) – Full Recipe

Tire meatballs are a beloved traditional dish from the town of Tire in İzmir, Turkey. This recipe is known for its simplicity and deep flavor, highlighting the natural taste of high-quality ground beef. Unlike many other meatball recipes, Tire köfte uses no breadcrumbs, eggs, or spices—just salt and meat. Here's how to make it at home:


Ingredients:

  • 500 grams (1.1 lbs) of ground beef (ideally with medium fat content)

  • 1 tablespoon of salt

  • 3 medium-sized tomatoes (or 1 cup of tomato puree)

  • 2–3 tablespoons of unsalted butter

  • Fresh parsley (optional, for garnish)


Instructions:



1. Prepare the meat mixture:
In a large mixing bowl, combine the ground beef and salt. Knead the mixture thoroughly with your hands for about 5 minutes. This helps develop the meat’s texture and makes the meatballs hold together better.

2. Rest the mixture:
Cover the bowl and let the meat rest in the refrigerator for at least 2 hours. This step is crucial—it helps the flavors develop and makes the shaping process easier.

3. Shape the meatballs:
Take small, walnut-sized pieces of the meat mixture and roll them into oval shapes. Then carefully thread them onto metal or wooden skewers.

4. Cook the meatballs:
Heat a non-stick pan (no oil needed) over medium heat. Place the skewers in the pan and cook the meatballs, turning occasionally, until they are browned and cooked through. This should take about 10–12 minutes.

5. Make the tomato sauce:
While the meatballs are cooking, grate 3 fresh tomatoes and cook them in a separate pan for about 5–7 minutes until the sauce thickens slightly. You can also use pre-made tomato puree if preferred.

6. Finish with butter:
Remove the meatballs from the skewers. In another pan, melt 2–3 tablespoons of butter and gently sauté the cooked meatballs in the butter for added richness and aroma.

7. Serve:
Place the meatballs on a serving plate. Pour the warm tomato sauce over them, drizzle with the remaining melted butter, and garnish with freshly chopped parsley. Serve hot with bread, rice, or a fresh salad.
