Açma is a pastry dish belonging to Turkish cuisine. It is generally consumed as a snack or type of bread during breakfasts and tea times. Açma is achieved by preparing and baking yeast dough in a special way.
**Ingredients**:
- 7 cups of flour
- 80 grams of granulated sugar
- 20 grams of salt
- Half a cup of vegetable oil
- 2.5 cups of water
- 2 packets of instant yeast (equivalent to 22 grams of dry yeast)
- A small amount of butter for rolling out the dough
- Egg yolk for brushing the tops
- Sesame seeds for sprinkling
**Instructions**:
1. Take warm water in a large mixing bowl. Add the sugar and instant yeast. Stir a bit and let the yeast activate. Once you see it has bubbled up, proceed to the next step.
2. To the activated yeast mixture, add the vegetable oil and salt. Slowly incorporate the flour, kneading the dough. The dough should be slightly sticky to the touch.
3. Cover the dough and let it rest in a warm place for about 2 hours, allowing it to double in size.
4. After the dough has risen, take it out and grease your hands. Divide the dough into walnut-sized pieces and flatten them on the greased surface. While flattening, press a bit of butter into the dough.
5. Roll and shape the dough into a coil, then form it into the shape of "açma" and place it on a baking tray lined with parchment paper. Brush the tops with egg yolk and sprinkle with sesame seeds.
6. Let the trays sit for about 15 minutes to allow for final rising. Then, bake in a preheated oven at 180°C (350°F) until the açma turn golden brown. This should take about 15-20 minutes, but keep an eye on them as baking times may vary from oven to oven.
7. Allow the açma to cool a bit before serving.
