Homemade Iskender Kebab Recipe - Prepare the Iconic Turkish Dish at Home!

- 300 grams of sirloin steak
- 1 cup of milk
- 1 teaspoon of salt
- Black pepper
- Half a tea cup of olive oil
- Juice of 1 grated onion
- Pide bread
- For the sauce:
  - 2 tablespoons of butter
  - 2 tablespoons of tomato paste
  - 2 grated tomatoes
- For topping:
  - Creamy yogurt
  - Melted butter

Instructions for Making Homemade Iskender:

1. Begin by thinly slicing the frozen piece of meat, as it is easily done with a sharp knife due to its frozen state.
2. Grind 1 onion in a food processor to turn it into a puree.
3. Place the meat in a bowl and add 1 teaspoon of salt and black pepper. Squeeze the juice from the pureed onion onto the meat. Only the onion juice will be used.
4. After adding the onion juice, add 1 cup of milk and half a tea cup of olive oil to the meat and mix thoroughly.
5. Cover with cling film and marinate in the refrigerator for at least 3 hours.
6. Melt 2 tablespoons of butter in a saucepan. Add 2 tablespoons of tomato paste and sauté until the paste darkens.
7. Once the paste is roasted, add 2 grated tomatoes and cook.
8. Add 1 cube of sugar, 1 teaspoon of salt, and 1 cup of hot water, and cook thoroughly.
9. Remove the boiling sauce from the heat.
10. Cook the marinated meat in a dry pan, adding them one by one.
11. Cook the meat for about 3 minutes on each side until golden brown.
12. Dice the pide bread and arrange it on a serving plate.
13. Drizzle melted butter over the diced pide.
14. Then pour the tomato sauce over the pide.
15. Arrange the browned meat to cover the pide.
16. Pour the tomato sauce over the meat again and add creamy yogurt and roasted green peppers on the side.
17. Finally, drizzle melted hot butter over the homemade Iskender.
