Pumpkin Pudding Cake Recipe



As the season suggests, pumpkin is a highly nutritious and vitamin-rich food. In addition to various desserts that can be made with pumpkin, pumpkin live cake stands out as a different flavor among desserts made with pumpkin. If you want to experience different flavors with pumpkin, pumpkin pudding cake will be ideal for you. In terms of serving suggestions, this recipe for pumpkin live cake is quite delightful.

Ingredients

For Sponge Cake
3 eggs
2 tablespoons hot water
1 tablespoon starch
1 cup flour
1 cup sugar
1 packet baking powder
1 packet vanilla

For Pudding
3 tablespoons sugar
2 cups milk
2 tablespoons flour
1 tablespoon starch
1 egg
1 tablespoon butter
1 packet whipped cream (There are 2 packets in one box of whipped cream. We will use one packet. If there is only one packet in the whipped cream box, use half of it.)

For Pumpkin Filling
half a kilogram of pumpkin
one and a half cups sugar

If we move on to the preparation of the pumpkin pudding cake, first, we start making the sponge cake.

- Separate the yolks and whites of 3 eggs.
- Beat the egg whites with one cup of sugar until it turns white and forms stiff peaks.
- After achieving the desired consistency with egg whites and sugar, add the remaining yolks of 3 eggs and beat again.
- Then, add 2 tablespoons of hot water and continue mixing.
- Once the mixture is well beaten, we're done with the mixer.
- Sift one cup of flour, 2 tablespoons of starch, baking powder, and vanilla into the mixture. Gently mix the sponge cake mixture from bottom to top with a wooden spoon without extinguishing it.

After the sponge cake mixture is ready, bake it in a preheated 180-degree oven for about half an hour without opening the oven door until it rises.

We baked our sponge cake in a 22 cm springform cake tin. If you don't have a springform cake tin, you can also bake it in a casserole dish or a different cake tin.

After the sponge cake is baked, let it cool on a tray without removing it from the mold.

Now, let's move on to the preparation of the pumpkin layer that we will spread on top of the sponge cake.

- It's better to prepare the pumpkin one night in advance.
- Put cubed pumpkin in a saucepan and sprinkle one and a half cups of sugar over it, then let it sit overnight.
- The pumpkin will release its own juice with the sugar and become tender.
- Once the sponge cake is ready, strain the excess liquid from the softened pumpkin and mash it with a fork. If you want to speed up this process, you can cook the pumpkin with a little sugar and very little water on low heat to expedite the softening process.

Now let's move on to making the pudding layer, which is the top layer of our pumpkin pudding cake.

- Mix 2 cups of milk, starch, flour, egg, and 3 tablespoons of sugar in a saucepan and cook on low heat, stirring constantly, until it becomes frothy, just like making regular pudding.
- Towards the end of cooking the pudding, add one tablespoon of butter and continue to mix.
- To prevent the pudding from sticking to the bottom, it's important to stir constantly while making it.

Once the pudding is frothy and cooked, remove it from the heat, add a packet of whipped cream, and whisk until smooth. Usually, whipped cream boxes contain two packets of whipped cream. We used one of these packets in our pumpkin pudding cake recipe. If the whipped cream box contains only one packet, it's better to use half of it. Prepare normal whipped cream with the remaining half packet and half a cup of milk to decorate the top.

After all three layers of the pumpkin pudding cake are ready, carefully remove the sponge cake from the springform cake tin onto a tray without removing it from the mold. First, use a knife to separate the edges of the sponge cake from the mold. Then, pour the prepared sugary pumpkin puree onto the sponge cake and spread it evenly. The pumpkin will form the middle layer of our pumpkin pudding cake. The layering goes as follows: sponge cake at the bottom, sugary pumpkin puree in the middle, and pudding on top, followed by whipped cream.

After spreading the pumpkin evenly on top of the sponge cake, pour the pudding on top. Doing all of this inside the cake tin will be convenient to prevent the pudding and pumpkin from spreading and to give the pumpkin pudding cake its shape.

Once all three layers are arranged, spread whipped cream on top of the pumpkin pudding cake and decorate it as you like. We decorated our pumpkin pudding cake with bananas and chocolate sauce. You can also opt for a walnut and pumpkin decoration, which gives a nice touch to the cake. Walnut goes really well with the pumpkin. However, as mentioned above, sponge cake goes really well with the pumpkin pudding cake, and the flow of pumpkin flavor in the cake, along with the superb taste of the pumpkin in the middle, the softness of the pudding and the buttery taste, combined with the taste of the sponge cake, make the pumpkin pudding cake an indispensable recipe for tea times and special occasions.

If you prefer a simpler recipe instead of the pumpkin pudding cake, you can easily make a pumpkin biscuit ball with the help of biscuits. In our recipe, we prepared a nice sponge cake for the bottom layer instead of using biscuits for the bottom layer like in the cheesecake recipe. Indeed, the sponge cake at the bottom, which is turned into a broken flour-like texture, complements the crushed biscuits at the bottom layer, providing a very pleasant taste. The pumpkin pudding cake is a very soft dessert, and the combination of the exquisite taste of the pumpkin with the softness of the pudding will lead you to a very delightful live cake recipe.
