You’ll want to add this pastry recipe to your cookbook even before watching the video because it’s incredibly delicious and soft! This practical recipe will make you forget about store-bought pastries. We prepared the dough using a mixer whisk attachment, eliminating the need for hand kneading. The dough is soft and slightly sticky, so when adding the cheese filling, lightly oil your hands to prevent sticking. This no-knead cottage cheese pastry will turn out just the way you want!

Ingredients:

  • About 6 cups of flour
  • 1 cup of milk
  • 2 eggs
  • 1 cup of water
  • 1 cup of vegetable oil
  • 1 packet of dry yeast
  • 1/4 teaspoon of mahleb
  • 4 tablespoons of sugar
  • 1 tablespoon of salt

For the Filling:

  • Cottage cheese
  • Chopped parsley

If you don’t have a mixer with a whisk attachment, you can use a dough kneading machine. If neither is available, you can knead the dough by hand. However, it may stick to your hands, so keep that in mind. You can add more flour to make it less sticky, but this recipe rises beautifully, and you will love the final result!

How to Make the Pastries:

  1. In a deep bowl, combine 2 eggs, 1 cup of milk, 1 cup of water, and 1 cup of vegetable oil.
  2. Add a small amount of mahleb and the dry yeast to the liquid mixture, stirring well to activate the yeast.
  3. If you want a quick and easy method like in the video below, gradually add 6 cups of flour while mixing.
  4. The dough will be slightly sticky. Cover it and let it rise for at least two hours.
  5. Once the dough has risen, take small portions (about the size of a walnut), roll them in your hands, and place a spoonful of the cottage cheese and parsley filling inside. Seal the dough.
  6. The dough will be very soft and slightly sticky. Lightly oil your hands to make shaping easier.
  7. Arrange the pastries on a baking tray, brush the tops with egg yolk, and sprinkle sesame or black cumin seeds.
  8. Bake in a preheated oven at 180°C (350°F) for about 25 minutes until golden brown.
