Ingredients for Meatless Çiğ Köfte:
- 4 teacups of coarse bulgur
- 2 tablespoons of isot (a type of chili pepper)
- 1 boiled potato

- 1 tablespoon of tomato paste
- 1 tablespoon of pepper paste
- 1 onion
- 1 tablespoon of ketchup
- 1 cube of sugar
- 2 cloves of garlic
- Half a teacup of olive oil
- 1 teaspoon of vinegar
- 1 tablespoon of pomegranate molasses
- 1 tablespoon of lemon juice
- 1 teaspoon each of cumin, black pepper, and chili powder
- 1 tablespoon of salt
- Approximately 1.5 cups of icy water or ice

Instructions for Meatless Çiğ Köfte:

1. To make meatless çiğ köfte, you'll need a special tray for shaping. Pour 4 teacups of coarse bulgur into the tray, add 1 tablespoon of isot and 1 tablespoon of red pepper flakes, then knead it until well mixed.

2. Use a food processor to blend 1 onion and 2 cloves of garlic into a puree. Squeeze out the juice and transfer it to a bowl.

3. To the onion and garlic puree, add 1 tablespoon of tomato paste, 1 tablespoon of pepper paste, 1 tablespoon of ketchup, 1 cube of sugar, 1 tablespoon of pomegranate molasses, 1 tablespoon of lemon juice, 1 teaspoon of vinegar, 1 tablespoon of salt, 1 teaspoon each of cumin, black pepper, and chili powder, and half a teacup of olive oil. Mix well.

4. Add this sauce and approximately 1.5 cups of icy water to the tray with the bulgur mixture. Continue kneading until the ice has melted.

5. Knead the mixture in the tray for about 45 minutes.

6. The coarse bulgur will absorb the prepared sauce and gradually soften.

7. After about 45 minutes, add 1 medium boiled potato to the mixture and knead for another 5 minutes until the potato is fully incorporated. To check if the texture is right, create a peak in the middle of the tray. Insert your fingers into the center. If the çiğ köfte sticks to your fingers and holds its shape, it's ready.

8. Shape the meatless çiğ köfte by squeezing it with your hands and forming it into small pieces.

9. Alternatively, you can spread it thinly on lavash bread and garnish with plenty of greens for a delicious çiğ köfte wrap.
