Purple Rice Recipe - A Nutritious Twist on Classic Pilaf

- 1 and a half cups of rice

- 3 cups of water
- 2 tablespoons of butter
- Salt

Instructions for Purple Rice Recipe:
1. Begin by extracting the color from the black carrot. Peel and dice one black carrot, then simmer it in 3 cups of water for approximately 10 minutes. The black carrot will infuse its color into the water. After 10 minutes, remove it from heat, but do not let it cool. We'll be using the water while it's still hot.

2. Strain the simmered water from the black carrot and proceed with preparing the rice.

3. Thoroughly rinse one and a half cups of rice with hot water. The white starch residue should be rinsed away, leaving the rice grains clean. Start toasting the rinsed rice in 2 tablespoons of melted butter.

4. Add the rice into the hot oil and toast for 2-3 minutes. Add approximately a teaspoon of salt and continue toasting for another 2 minutes.

5. After toasting on low heat, pour about 2 cups of the hot water from the black carrot over the well-toasted rice, gently stir, and then place it back on low heat. Cook the rice on low heat for about 20 minutes until the water is absorbed.

6. Once the water is absorbed, turn off the heat, place a paper towel over the top, and let the rice steam for about 10 minutes. Then, it's ready to serve. Enjoy your beautifully colored purple rice!
