Zesty Soda Cake Recipe and How to Make a Fluffy Zebra Cake with Added Cocoa for Extra Fluffiness!

Don't be disappointed if your cake isn't rising - harness the fantastic rising and softening effect of sparkling water to create amazing, fluffy, and delicious cakes.

Ingredients for Sparkling Water Cake:
- 3 eggs
- 1 cup sparkling water
- 2.5 cups flour
- 2 tablespoons cocoa powder
- 1 cup vegetable oil
- 1 cup granulated sugar
- 2 packets baking powder
- 1 packet vanilla extract

For our zebra-shaped sparkling water cake, we added cocoa for a twist, but if you prefer not to shape it, you can simply mix the cocoa batter into the cake to create a two-toned effect.

Instructions for Zesty Zebra Cake:
- Start by whisking 3 eggs and 1 cup of sugar until pale and creamy.
- Add 1 cup of sparkling water and 1 cup of vegetable oil, and continue to whisk.
- Incorporate 2 cups of flour, 2 packets of baking powder, and 1 packet of vanilla extract, and mix thoroughly.
- Set aside 1/3 of the batter and mix in 2 tablespoons of cocoa powder.
- To the remaining batter, add 1 tablespoon of lemon juice and 1/2 cup of flour, and mix well.
- Pour half of the white batter into a greased cake mold.
- Spoon the dark batter in 4 small circles onto the mold, then add white batter to the centers. Pour dark batter into the centers of the white circles. Repeat until all batter is used, creating a zebra pattern.
- Bake in a preheated oven at 180 degrees Celsius for approximately 45 minutes.
- Enjoy your delicious zesty soda cake!
